Faena El Bistro

Faena Hotel Buenos Aires has invited Christopher Carpentier, one of Latin America’s most renowned chefs, to be part of its Collaboratory (collaboration laboratory) and formulate this new proposal for the restaurant El Bistro, together with resident Chef Rodrigo Vazquez.
Chef Carpentier’s take on some traditional appetizers include the Brazilian moqueca (shrimp stew), the salmon cancato from Chile and the shrimp and sea bass ceviche from Peru. The main dishes include southern flavors like the Patagonian loin of lamb and the hare civet; an homage to Basque cooking, the chipirón; a tribute to Mediterranean cuisine, the red mullet, cooked at extremely low temperatures; and a new twist on a beloved local dish Locro. Mate ice cream rounds off the menu, combining modern techniques with the most traditional flavors of the region.
Spectacular, contemporary and stylish, the Faena Hotel Buenos Aires is extraordinary. The utilitarian façade of the seven-story brick building, a turn-of-the-20th-century grain warehouse, belies the imaginative interiors created by Philippe Starck. Flourishes include unicorn heads on the walls, velvet curtains, crimson-upholstered chairs and crystal chandeliers. There is no reception desk; new arrivals are greeted by an “experience manager” who serves as a personal concierge throughout their stay. The rooms, many with city and Río de la Plata views, have lapacho-wood floors and arabasceto marble bathrooms. The outdoor pool is one of BA’s prime see-and-beseen spots. A sexy vibe imbues the sultry Library Lounge and El Cabaret, which host nightly tango performances.
Located in Puerto Madero, the city’s most exclusive gastronomic and business area, the hotel is surrounded by green parks and features unobstructed views. Awash in red velvet, the Faena cabaret invites you to step into 1920s Buenos Aires to witness Argentina’s finest tango show, Rojo Tango.
